Muesli, also called Swiss oatmeal, was developed in the late nineteenth century by a Swiss physician for his patients. Treat it like a dry cereal and eat it warmed or at room temperature.
Stir together in a large bowl:
1 cup old-fashioned rolled oats
1 cup boiling water
Let stand, covered, overnight. The next morning, stir in:
1/2 cup raisins
1/3 cup chopped walnuts or unblanched almonds
1/4 cup flaked unsweetened dried coconut
1/4 cup chopped dried apricots
1 teaspoon light brown sugar
Spoon into bowls. (If desired, the cereal can be warmed in a small saucepan before serving.) Pour over each serving:
